Teriyaki Chicken Taco Dinner

Have you ever had a day where you wanted to cook something awesome, but didn't have all the right ingredients? That happened to me this week. I was really craving Thai and Mexican food, but I couldn't figure out what to make. The result was...gluten-free teriyaki chicken tacos with spiced sweet potatoes fries paired with sriracha mayo!

It was super easy to make and pretty healthy too. My hubby loves Mexican food and anything spicy, so it was a huge hit with him. In fact he said, "Oh I could eat like this every night!"


Tasty ingredients needed:

2 chicken breasts
Teriyaki sauce (I use the 365 brand from Whole Foods)
Gluten-free corn tortillas
Salsa
Salt/Pepper
Oregano
Olive Oil
2 sweet potatoes
Mayo
Sriracha

Cooking Tips:

Teriyaki Chicken
Heat oven to 375 degrees.
Place chicken breasts in baking dish. Sprinkle with salt and pepper. Drizzle teriyaki sauce and olive oil on top of breasts.
Bake for 45 minutes.

When cooked, shred chicken and place in corn tortillas. Top with your favorite toppings and salsa :)

Sweet Potato Fries
Heat oven to 375 degrees.
Slice sweet potatoes into diagonals to create the potato wedge look.
Place slices on baking sheet. Sprinkle with salt, pepper, oregano (maybe even a little BBQ seasoning, if you're feeling feisty!). Drizzle olive oil over the potatoes and bake until soft -- about 20 minutes.

Sriracha Mayo
Take a small bowl, fill it with some mayo and a couple squirts of siracha (or more depending on how spicy you want it to be), stir together and you're ready to go!
