Gluten-Free Pumpkin Scones

Hope y'all are having a fun and relaxing weekend! Just as I promised yesterday, here is a tasty recipe for Gluten-Free Pumpkin Scones...YUM! (A video will be coming soon)

These pumpkin scones are a healthier version of the Starbucks (uber-yummy, melt-in-your-mouth) ones & they are made with a pre-made plain gluten-free scone mix that can be found at your local health food store and super market. I use Stickey Fingers Bakeries' Original Gluten-Free Scone Mix. I also use part of this mix to make gluten-free waffles!

Ok, so the secret to these scones is Libby's 100% Pure Pumpkin Puree, which is naturally gluten-free! How handy, right?!

Ingredients:
  • 1 Package of Sticky Fingers Bakeries' Original Gluten-Free Scone Mix
  • 1 Cup of Cool Water
  • 3 TBLS. Vegetable Oil (I use melted Organic Ghee (Clarified Butter) from Purity Farms. It is made from Grade AA Sweet Creamery Certified Organic butter.)
  • 1/2 Cup Pumpkin Puree
  • 2 TSP. Cinnamon
  • 1/4 TSP. Nutmeg
  • 1/4 TSP. Ginger
Directions:

Preheat oven to 375 Degrees Fahrenheit.
Lightly grease a baking sheet pan or you can line it with parchment paper.
Mix entire contents of dry mix, oil or butter, and water in a large bowl.
Add in pumpkin puree, cinnamon, nutmeg, and ginger.
Stir with a fork until all ingredients are combined into a sticky dough.

Heap spoonfuls of the batter onto the baking sheet (you can make them as big or small as you want).
Bake for 13-5 minutes, until they are golden brown.
Let them cool for a few minutes and then dig in!
